Christmas Cookie Ideas

If you're like me, you love to gift cookies this time of year (how cute are these tags?).  Because it's a nice thing to do but, let's be real, it's also an excuse to bake every single day for an entire month.  What do you mean having fudge and peanut butter balls and gingerbread men and truffles and (fill in the blank with 8 more things) is too much to have around the house THEY ARE GIFTS FOR PEOPLE YOU MONSTER.  See, win-win.  You get to bake, you get to eat, you get to gift.  Here are some of my favorites from last year - and please look forward to my month of December madness coming up...

Vanilla Bean Sugar Cookies

If you put a chocolate chip cookie and a sugar cookie in front of me, I'll always go for chocolate.  However, these are hands down the best sugar cookies I've ever put in my mouth.  And I meant that plural because I've had more than one, in fact, I just put one in my mouth for breakfast.  Perfectly buttery, with a crisp cookie shell and a soft and chewy finish.  I altered a Martha Stewart recipe by adding more butter (what) and substituting vanilla extract with vanilla bean paste (my new favorite thing).  Do you see these little flecks...

You might have to wake up your eyes with more coffee and look closely, but they're there.  And the subtle flavor they add to the cookie make them unreal.  We chose to roll them in sanding sugar before baking, but you could icing if you wanted.

Although, in my opinion, that would only take away from the gloriousness that is this cookie.  Is "gloriousness" a word?  Sometimes I put lots of letters together and hope for the best.

Vanilla Bean Sugar Cookies
(Makes approx. 2 dozen)

2 sticks (1 cup) unsalted butter, room temp
1 1/2 cups granulated sugar
1 large egg
1 1/2 tsp vanilla bean paste
2 cups flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1/4 cup sour cream
Sanding sugar or sprinkles (optional)

In a large bowl, cream together butter and sugar with an electric mixer until light and fluffy - about 3 minutes.  Scrape down sides with spatula.  Add egg and vanilla paste and mix until combined.

In a separate bowl, whisk together flour, baking powder, salt and baking soda.  Add half to wet ingredients, mixing on low speed.  Then add sour cream, combine, and finally rest of dry ingredients.  Mix until a dough forms.  Cover with plastic wrap and chill for 30 minutes.  Preheat oven to 350.  Roll dough into golf-ball sized balls (or slightly larger) and dip one side in sugar (if using).  Place sugar-side up on parchment-lined baking sheets, a few inches apart.

Bake for 10-15 minutes, until edges start to brown slightly.

Perfect buttery bottom.  That's not potty talk.

Ombre Cake

My niece celebrated her 7th birthday over Thanksgiving break - and I volunteered to make her a cake at the very last second.  Boxed everything (I'm sorry, Martha).  But to make it more fun and slightly more creative, I decided to divide the cake batter into 3 bowls, and to add varying degrees of red food coloring for an ombre effect.  In case you're unfamiliar with the word/trend, it means "having colors or tones that shade into each other."  You're welcome for your morning lesson of learning.

Parker House Rolls

As chronicled here and here, I have had many dramatic Thanksgivings, which is why I was very thankful to be a guest this year in someone else's home, eating their wonderful food and contributing just one, simple side.  I made these rolls, and while they were simple they were also delicious.  I was unfamiliar with a Parker House Roll, but according to Wikipedia it's buttery, soft, made with milk, and folded in half.  Key word there: buttery.  Or "boooooooootery" as Paula would say.  And even though she had nothing to do with this dish, she would have been proud, because I brushed these babies with butter like I was basting a turkey with "aaoooowl" (that means oil in Paula's language).  These rolls would make a great side dish any time of year, but they were perfect for sopping up gravy and everything else on my plate this past Thursday.

I hope you all had wonderful meals as well.

Banana Bars with Brown Butter Icing

Somehow, this morning, in between feeding a baby and getting a 3-year-old to dress himself (which takes longer than you could ever possibly imagine) I found the time to make these.  I forgot to brush my hair, but I made Brown Butter Icing.  My priorities are whacked.  OR ARE THEY.  You make these and tell me what you would rather have in your life... smooth, tangle-free hair or soft, banana bars with nutty, buttery icing.  Yeah, I'm bringing dreadlocks back.

hello.

my New York happy places...

the Rachael Ray Show green room
(tune in to see Carson on the 26th)

Back from a quick trip to New York.  First time traveling with two little ones = success, in large part due to the fact that I recently gave birth to an ANGEL BABY who gives me zero problems (knock.on.wood.).  Thankful for the fact that my MIL is cooking the majority of Thanksgiving, but excited to contribute these.  And excited that my mom will be there also and is making this again.

More later.  And past Thanksgiving day posts here and here.

Kale and Avocado Salad

I mentioned in a previous post that we've been spending a lot of time at the live shows of The Voice lately.  In other words, I've been spending a lot of time at the craft services table lately.  If you're unfamiliar with craft service, it's basically a glorious table full of glorious food.  Things you would never buy for yourself because you know you have no will power, like peanut butter-filled pretzels, and chili cheese fritos, and buckets and buckets of red vines.  Craft service and I have a love/hate relationship.  It beckons me.  I'm not kidding, out loud.  It says my name, all day long, "Siri, Siri, Sari."

*Ok, fine, the lady in charge is named Sari so I hear her name all day long BUT IT SOUNDS LIKE A BECKONING CALL.

Occasionally (not really), I am able to avoid the junk and I'll go for something like a Kale Salad with Avocado.  I usually only enjoy cooked kale but there is something about pairing it with creamy avocado and a sesame-style dressing that makes it so delicious.  So I recreated it at home...

Kale and Avocado Salad
(Serves 4-6)

1 head kale, finely chopped
1 large avocado, diced
1/2 cup cherry tomatoes, halved
1 T black sesame seeds (optional)
Juice of half a lemon
Olive oil
Dash of sesame oil

Combine first 4 ingredients in bowl.  Whisk together olive oil (a few tablespoons), lemon juice and sesame oil in smaller bowl.  Add to salad and toss.

Mini Herbed Pommes Anna

One of my favorite things to do on a weekend morning is drink coffee, page through a new Bon Appetit magazine, all the while plugging my 9-week old with a pacifier.  What, I need a moment.  It was during one of those moments that I came across this recipe.  I have no idea who Anna is, but she was probably French.  "Pommes" means "potatoes" in French, right?  Yup, I took it all through high school, I remember thing(s).  Well, whoever she is, these are delightful.  Easy to make, especially if you have a mandoline, but impressive enough to serve at a dinner party.  Not to mention you can make most of it ahead of time.  My son loved to peel through each crispy layer and so did I.

life.

(fake NY, excited to be in real NY next week)

Super Important Updates:

1. Jack got an ear infection this week.
2. The Voice had 3 live tapings.
3. I had to vote an hour away from my house cause I hadn't changed my address since the last election.
4. Yesterday, I ate two different kinds of soup, within 5 minutes of each other, and I spilled both kinds on my shirt.  I told you, super important updates.

Super Important Links:

Just ordered some of these for my fridge.
Yup, ok, have to top SOMETHING with this icing, stat.
This cute print is getting me excited about spending Christmas in MN : )
Want to make these this weekend.
And speaking of potatoes, also these.

*I promise to post more next week, but I probably won't.

Salty Chocolate and Butterscotch Blondies

I've had these on my Pinterest page for awhile now, and I finally made them yesterday.  If you're looking for something to bake QUICKLY, bake these.  It took me 5 minutes to get these ingredients into the pan - the Baker's Edge pan which was a little bit too big but who cares.  I also added some butterscotch chips because I'M AMAZING.  They were so good.  The combo of rich dark chocolate, sweet butterscotch and a touch of salt... let's just say I ate way too many before my "Body After Baby" class.  Not a good idea.  I don't think that's the way you get a body after a baby.  I could be wrong.
AM I WRONG?!

one of those mornings...

It's not even 7am, and so far this morning I've been pooped on, I've had to plunge a toilet and my earrrrrly morning Homeland viewing was interrupted just as it got incredible.  That's the sort of opening you expect from a food blog, right?  Well you're just going to have to deal with it because that's what I'm doing - DEALING, with a smile on my face and a coffee in my mouth!

Anyway - if that picture above looks familiar, it's because it's been on the blog before (Saveur's Chocolate Chip Cookies).  But now The Post Social "postmarked" my post (that's a lot of the same word) so please check it out here!  Love that site.

How the adults trick-or-treat.  As someone pointed out on Instagram, there appears to be a wig hair growing from my drink.  Only thing, no one was wearing a wig.  I think it might be growing out of my thumb, in fact.  Let's hope that's a joke I'm making.

My cousin sent me these napkins, and she made them!  Check out her Etsy shop, Dutch Wives Club, for these (which can be printed in any color) and much, much more.  She also gave Jack that 'Favorite Brother' tee from her shop, which I love because he totally is.

Election Cookies.  To get you in the political spirit, as if all these campaign ads aren't already doing that.  I was watching Wheel of Fortune and Jeopardy the other day, because I'm a dorkface, and EVERY SINGLE COMMERCIAL had to do with a campaign, proposition, measure, etc.  Enough!!  Just vote and end this madness already!

I made these Slow Roasted Green Beans with Sage over the weekend.  Extremely easy, seasonal and delicious.  Highly recommend.
